Cooking with Fennel

This is the first time I'm cooking with fennel (the vegetable, I use the seeds regularly, even the fresh version of the seeds which used to be available in this season in Gujarat)

Pork & fennel chilli, fennel scented couscous and a carrot, apple, fennel slaw.


I had got the fennel in my @abelandcole box a week ago, but hadn’t been home to cook. So it had started to look a bit wilted.

I used the best crisp thin bits in the slaw, the thick semi-wilted bits went in the chilli, and the dehydrated bits went into the couscous as it was being cooked and discarded when it was drained. The fronds were used as garnish.

Jugaad cooking as we call this in India.

Quite happy with the flavour, I will buy this vegetable/herb again. How do you cook fennel?
